Low-Carb French Toast
Ingredients:
- 1 whole egg
- 1/2 tsp baking powder
- 1 tbsp coconut flour
- 1 tbsp almond flour
- 1 tbsp water
- 2 tbsp melted butter or melted coconut oil
- 1/4 tsp vanilla, optional
- 2 tsp Lakanto or Swerve monkfruit Golden sugar substitute (or favorite sweetener)
- 1 tsp ground cinnamon
Optional, for serving:
- butter
- Choc Zero or Lakanto maple syrup
Instructions:
- Mix all ingredients in a mug, making sure to scrape the sides and bottom well.
- Microwave for 90 seconds. Carefully remove it, it will be hot!
- You can eat directly from the mug, or invert on a plate. Top with butter and syrup, if desired.
