• Low-Carb French Toast

      Ingredients:

      • 1 whole egg
      • 1/2 tsp baking powder
      • 1 tbsp coconut flour
      • 1 tbsp almond flour
      • 1 tbsp water
      • 2 tbsp melted butter or melted coconut oil
      • 1/4 tsp vanilla, optional
      • 2 tsp Lakanto or Swerve monkfruit Golden sugar substitute (or favorite sweetener)
      • 1 tsp ground cinnamon

      Optional, for serving:

      • butter
      • Choc Zero or Lakanto maple syrup

      Instructions:

      1. Mix all ingredients in a mug, making sure to scrape the sides and bottom well.
      2. Microwave for 90 seconds. Carefully remove it, it will be hot!
      3. You can eat directly from the mug, or invert on a plate. Top with butter and syrup, if desired.
